Ingredients:

  • 6 cups cubed seedless watermelon (approx. 900g)
  • 4 ounces feta cheese, crumbled (113g)
  • 1/2 cup fresh mint leaves, roughly chopped (approx. 25g)
  • 1/4 cup thinly sliced red onion (approx. 50g)
  • 3 tablespoons extra virgin olive oil (45 ml)
  • 2 tablespoons fresh lime juice (30 ml)
  • 1/2 teaspoon lime zest (2.5 ml)
  • 1/4 teaspoon freshly ground black pepper (1.25 ml)
  • Pinch of sea salt

Instructions:

  1. Cut the watermelon into bite-sized cubes. Ensure all seeds are removed. Pat dry with paper towels to remove excess moisture.
  2. Crumble the feta cheese. Roughly chop the fresh mint. If using, thinly slice the red onion.
  3. In a small bowl or jar, whisk together the olive oil, lime juice, lime zest, black pepper, and salt. Taste and adjust seasonings as needed.
  4. In the large mixing bowl, gently combine the cubed watermelon, crumbled feta, chopped mint, and sliced red onion (if using).
  5. Drizzle the lime dressing over the salad. Gently toss to combine, being careful not to crush the watermelon.
  6. Serve the salad immediately or chill for a short time (no more than 30 minutes).
