Ingredients:
- 6 cups cubed seedless watermelon (approx. 900g)
- 4 ounces feta cheese, crumbled (113g)
- 1/2 cup fresh mint leaves, roughly chopped (approx. 25g)
- 1/4 cup thinly sliced red onion (approx. 50g)
- 3 tablespoons extra virgin olive oil (45 ml)
- 2 tablespoons fresh lime juice (30 ml)
- 1/2 teaspoon lime zest (2.5 ml)
- 1/4 teaspoon freshly ground black pepper (1.25 ml)
- Pinch of sea salt
Instructions:
- Cut the watermelon into bite-sized cubes. Ensure all seeds are removed. Pat dry with paper towels to remove excess moisture.
- Crumble the feta cheese. Roughly chop the fresh mint. If using, thinly slice the red onion.
- In a small bowl or jar, whisk together the olive oil, lime juice, lime zest, black pepper, and salt. Taste and adjust seasonings as needed.
- In the large mixing bowl, gently combine the cubed watermelon, crumbled feta, chopped mint, and sliced red onion (if using).
- Drizzle the lime dressing over the salad. Gently toss to combine, being careful not to crush the watermelon.
- Serve the salad immediately or chill for a short time (no more than 30 minutes).
