Ingredients:
- 4 cups (600g) cubed seedless watermelon
- 1/4 cup (60ml) freshly squeezed lime juice (from about 2-3 limes)
- 1/4 cup (60ml) water
- 2 tablespoons (30ml) agave nectar or honey (adjust to taste for sweetness) - Optional
- 1/4 cup (5g) Fresh mint leaves, roughly chopped
- Pinch of sea salt (Optional)
- Pinch of cayenne pepper (for a little kick! - Optional)
Instructions:
- Cube the watermelon and remove any stray seeds.
- Combine watermelon, lime juice, water, agave nectar (if using), mint and optional salt/cayenne in a blender or food processor. Blend until completely smooth.
- Taste the mixture and adjust sweetness or lime juice to your preference.
- For a smoother texture (and to prevent the mint from browning slightly), chill the blended mixture in the refrigerator for at least 30 minutes.
- Carefully pour the blended mixture into your popsicle molds, leaving a small space at the top for expansion.
- Insert popsicle sticks into the molds.
- Freeze for at least 6-8 hours, or preferably overnight, until completely solid.
- To unmold, briefly dip the bottom of the molds in warm water for a few seconds. Gently wiggle the popsicles out.
- Enjoy immediately, or wrap individually in plastic wrap and store in the freezer for up to a week.
