Ingredients:

  • 4 cups (600g) cubed seedless watermelon
  • 1/4 cup (60ml) freshly squeezed lime juice (from about 2-3 limes)
  • 1/4 cup (60ml) water
  • 2 tablespoons (30ml) agave nectar or honey (adjust to taste for sweetness) - Optional
  • 1/4 cup (5g) Fresh mint leaves, roughly chopped
  • Pinch of sea salt (Optional)
  • Pinch of cayenne pepper (for a little kick! - Optional)

Instructions:

  1. Cube the watermelon and remove any stray seeds.
  2. Combine watermelon, lime juice, water, agave nectar (if using), mint and optional salt/cayenne in a blender or food processor. Blend until completely smooth.
  3. Taste the mixture and adjust sweetness or lime juice to your preference.
  4. For a smoother texture (and to prevent the mint from browning slightly), chill the blended mixture in the refrigerator for at least 30 minutes.
  5. Carefully pour the blended mixture into your popsicle molds, leaving a small space at the top for expansion.
  6. Insert popsicle sticks into the molds.
  7. Freeze for at least 6-8 hours, or preferably overnight, until completely solid.
  8. To unmold, briefly dip the bottom of the molds in warm water for a few seconds. Gently wiggle the popsicles out.
  9. Enjoy immediately, or wrap individually in plastic wrap and store in the freezer for up to a week.
