Ingredients:
- 1 can (15 oz/425 g) black beans, drained and rinsed
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 1 small red onion, finely chopped
- 1 medium jalapeño, seeded and finely chopped (adjust to taste)
- 2 cups fresh corn (frozen is acceptable, thawed)
- 1/4 cup fresh cilantro, chopped
- 2 medium tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh lime juice (about 2 limes)
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
- In a large mixing bowl, combine black beans, corn, diced bell peppers, red onion, jalapeño, tomatoes, and garlic.
- Add chopped cilantro, lime juice, ground cumin, salt, and pepper to the bowl.
- Gently mix all ingredients until evenly combined.
- Taste and adjust seasoning as necessary (more salt, pepper, or lime juice if desired).
- Cover the bowl with plastic wrap or transfer to an airtight container.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
- Serve chilled with tortilla chips or as a topping for tacos.
