Ingredients:

  • 1 can (15 oz/425 g) black beans, drained and rinsed
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 medium jalapeño, seeded and finely chopped (adjust to taste)
  • 2 cups fresh corn (frozen is acceptable, thawed)
  • 1/4 cup fresh cilantro, chopped
  • 2 medium tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine black beans, corn, diced bell peppers, red onion, jalapeño, tomatoes, and garlic.
  2. Add chopped cilantro, lime juice, ground cumin, salt, and pepper to the bowl.
  3. Gently mix all ingredients until evenly combined.
  4. Taste and adjust seasoning as necessary (more salt, pepper, or lime juice if desired).
  5. Cover the bowl with plastic wrap or transfer to an airtight container.
  6. Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  7. Serve chilled with tortilla chips or as a topping for tacos.
