Ingredients:
- 2 cups water
- 1 cup granulated sugar
- 1 cup fresh ginger, peeled and sliced
- Optional: Juice of 1 lemon
Instructions:
- Peel and slice the ginger into thin pieces.
- In a medium saucepan, combine water, sugar, and ginger.
- Bring the mixture to a boil over medium heat, stirring until the sugar dissolves. Reduce heat and simmer gently for 15-20 minutes.
- Remove from heat, and let it cool slightly. Strain the syrup through a fine mesh strainer or cheesecloth into a clean jar.
- Mix in lemon juice for added brightness, if desired.
- Allow the syrup to cool completely before sealing the jar and storing it in the refrigerator.
