Ingredients:

  • 2 cups water
  • 1 cup granulated sugar
  • 1 cup fresh ginger, peeled and sliced
  • Optional: Juice of 1 lemon

Instructions:

  1. Peel and slice the ginger into thin pieces.
  2. In a medium saucepan, combine water, sugar, and ginger.
  3. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves. Reduce heat and simmer gently for 15-20 minutes.
  4. Remove from heat, and let it cool slightly. Strain the syrup through a fine mesh strainer or cheesecloth into a clean jar.
  5. Mix in lemon juice for added brightness, if desired.
  6. Allow the syrup to cool completely before sealing the jar and storing it in the refrigerator.
