Ingredients:

  • 10 large organic lemons (preferably Amalfi or Sorrento)
  • 1 liter (4 cups) high-proof vodka or grain alcohol (about 190 proof)
  • 3 cups (600 g) granulated sugar
  • 3 cups (720 ml) water

Instructions:

  1. Wash and dry lemons thoroughly. Use a vegetable peeler to remove the zest (yellow part only) from the lemons, avoiding the white pith.
  2. Place lemon zest in a large glass jar. Pour the vodka over the zest, ensuring its completely submerged. Seal the jar tightly and shake it gently.
  3. Store the jar in a cool, dark place for 5 to 7 days. Shake the jar every couple of days to mix the flavors.
  4. In a large saucepan, combine sugar and water. Heat gently, stirring until the sugar is completely dissolved. Remove from heat and let cool.
  5. Strain the lemon-infused vodka through a fine mesh strainer or cheesecloth into a clean bowl. Discard the zest. Stir in the cooled simple syrup.
  6. Pour the limoncello into clean bottles, seal them, and store in the freezer.
