Ingredients:
- 1/2 cup (40 g) dried African bird
- s eye chilies
- 2 tablespoons (30 g) smoked paprika
- 2 tablespoons (30 g) garlic powder
- 1 tablespoon (15 g) onion powder
- 1 tablespoon (15 g) dried oregano
- 1 tablespoon (15 g) dried thyme
- 1 teaspoon (5 g) salt
- 1 teaspoon (5 g) black pepper
- 1 teaspoon (5 g) lemon zest (optional)
Instructions:
- Gather all the dried spices and herbs in a mixing bowl.
- If youre using whole dried chilies, grind them in a spice grinder or mortar and pestle until finely crushed.
- In a mixing bowl, combine the ground chilies, smoked paprika, garlic powder, onion powder, oregano, thyme, salt, black pepper, and lemon zest (if using).
- Stir until all ingredients are evenly blended and no clumps remain.
- Transfer the spice blend to an airtight container and store in a cool, dark place. Use within 6 months for optimal flavor.
