Ingredients:

  • 1/2 cup (40 g) dried African bird
  • s eye chilies
  • 2 tablespoons (30 g) smoked paprika
  • 2 tablespoons (30 g) garlic powder
  • 1 tablespoon (15 g) onion powder
  • 1 tablespoon (15 g) dried oregano
  • 1 tablespoon (15 g) dried thyme
  • 1 teaspoon (5 g) salt
  • 1 teaspoon (5 g) black pepper
  • 1 teaspoon (5 g) lemon zest (optional)

Instructions:

  1. Gather all the dried spices and herbs in a mixing bowl.
  2. If youre using whole dried chilies, grind them in a spice grinder or mortar and pestle until finely crushed.
  3. In a mixing bowl, combine the ground chilies, smoked paprika, garlic powder, onion powder, oregano, thyme, salt, black pepper, and lemon zest (if using).
  4. Stir until all ingredients are evenly blended and no clumps remain.
  5. Transfer the spice blend to an airtight container and store in a cool, dark place. Use within 6 months for optimal flavor.
