Ingredients:
- 1 pound (450g) raw shrimp, peeled, deveined, and roughly chopped
- 1 cup (240ml) freshly squeezed lime juice
- 1/2 cup (120ml) red onion, finely diced
- 1/2 cup (75g) tomato, seeded and diced
- 1/2 cup (75g) cucumber, seeded and diced
- 1/4 cup (30g) fresh cilantro, chopped
- 1-2 serrano peppers (or jalapeño), seeded and minced
- 1 tablespoon olive oil
- 1 teaspoon kosher salt, or to taste
- 1/2 teaspoon black pepper, freshly ground
- Optional: 1 avocado, diced, for serving
Instructions:
- In a large glass bowl, combine the chopped shrimp and lime juice. Ensure the shrimp are fully submerged.
- Cover the bowl and refrigerate for at least 1 hour, or until the shrimp turns opaque and pink.
- While the shrimp is marinating, dice the red onion, tomato, cucumber, cilantro, and serrano pepper.
- Once the shrimp is marinated, drain off the lime juice (but reserve a tablespoon or two for extra flavor if desired). Add the diced vegetables, cilantro, olive oil, salt, and pepper to the bowl with the shrimp.
- Gently toss all ingredients to combine. Taste and adjust seasoning as needed. Add more lime juice, salt, or pepper to your liking.
- Cover and chill for another 15-20 minutes to allow the flavors to meld.
- Serve chilled, garnished with diced avocado (optional).
