Ingredients:

  • 1 pound (450g) raw shrimp, peeled, deveined, and roughly chopped
  • 1 cup (240ml) freshly squeezed lime juice
  • 1/2 cup (120ml) red onion, finely diced
  • 1/2 cup (75g) tomato, seeded and diced
  • 1/2 cup (75g) cucumber, seeded and diced
  • 1/4 cup (30g) fresh cilantro, chopped
  • 1-2 serrano peppers (or jalapeño), seeded and minced
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt, or to taste
  • 1/2 teaspoon black pepper, freshly ground
  • Optional: 1 avocado, diced, for serving

Instructions:

  1. In a large glass bowl, combine the chopped shrimp and lime juice. Ensure the shrimp are fully submerged.
  2. Cover the bowl and refrigerate for at least 1 hour, or until the shrimp turns opaque and pink.
  3. While the shrimp is marinating, dice the red onion, tomato, cucumber, cilantro, and serrano pepper.
  4. Once the shrimp is marinated, drain off the lime juice (but reserve a tablespoon or two for extra flavor if desired). Add the diced vegetables, cilantro, olive oil, salt, and pepper to the bowl with the shrimp.
  5. Gently toss all ingredients to combine. Taste and adjust seasoning as needed. Add more lime juice, salt, or pepper to your liking.
  6. Cover and chill for another 15-20 minutes to allow the flavors to meld.
  7. Serve chilled, garnished with diced avocado (optional).
