Ingredients:

  • 0.5 cup coconut oil

  • 1.5 cups finely grated zucchini
  • 0.75 cup semi-sweet chocolate chips
  • 0.25 cup chopped walnuts

Instructions:

  1. Preheat oven to 350°F (175°C). Grate zucchini using the fine side of a box grater, then place shreds in a clean towel and gently squeeze out excess liquid until damp.
  2. In a medium bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
  3. In a large bowl, beat melted coconut oil, egg, and vanilla extract until smooth, then fold in the squeezed zucchini.
  4. Gradually stir the dry ingredients into the wet mixture until just combined. Fold in chocolate chips and walnuts.
  5. Pour batter into a lined 8x8 inch baking pan, smooth the top, and bake for 25-30 minutes until edges are firm.
