Instructions:
- Preheat oven to 350°F (175°C). Grate zucchini using the fine side of a box grater, then place shreds in a clean towel and gently squeeze out excess liquid until damp.
- In a medium bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
- In a large bowl, beat melted coconut oil, egg, and vanilla extract until smooth, then fold in the squeezed zucchini.
- Gradually stir the dry ingredients into the wet mixture until just combined. Fold in chocolate chips and walnuts.
- Pour batter into a lined 8x8 inch baking pan, smooth the top, and bake for 25-30 minutes until edges are firm.
