Ingredients:

  • 2 large overripe bananas (approx. 200g), mashed smooth
  • 1 cup (90g) rolled oats
  • 1 large egg (approx. 50g)
  • 1/2 tsp (2g) ground cinnamon
  • 1 tsp (5ml) pure vanilla extract
  • 1 tbsp (15g) melted unsalted butter

Instructions:

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, mash the bananas using a fork until they reach a smooth, velvety paste.
  2. Whisk in the egg, vanilla extract, and cinnamon until the mixture is well-incorporated.
  3. Gently fold in the oats. Stir just until the oats are moistened and the batter looks thick and sticky.
  4. Line your baking sheet with parchment paper. Spread the mixture into a rectangle roughly 1/2 inch thick, or scoop into 6 equal bars.
  5. Bake for 12 minutes, or until the edges are light golden and the center feels springy to the touch.
  6. Let the bars cool for 10 minutes before slicing to allow the structure to set.
