Ingredients:
- 2 large overripe bananas (approx. 200g), mashed smooth
- 1 cup (90g) rolled oats
- 1 large egg (approx. 50g)
- 1/2 tsp (2g) ground cinnamon
- 1 tsp (5ml) pure vanilla extract
- 1 tbsp (15g) melted unsalted butter
Instructions:
- Preheat your oven to 350°F (175°C). In a mixing bowl, mash the bananas using a fork until they reach a smooth, velvety paste.
- Whisk in the egg, vanilla extract, and cinnamon until the mixture is well-incorporated.
- Gently fold in the oats. Stir just until the oats are moistened and the batter looks thick and sticky.
- Line your baking sheet with parchment paper. Spread the mixture into a rectangle roughly 1/2 inch thick, or scoop into 6 equal bars.
- Bake for 12 minutes, or until the edges are light golden and the center feels springy to the touch.
- Let the bars cool for 10 minutes before slicing to allow the structure to set.
