Ingredients:
- 1 cup (225g) unsalted butter
- 3 cups (450g) firm apples, peeled and diced
- 2 cups (250g) all-purpose flour
- 1.5 tsp (7g) baking powder
- 0.5 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 0.75 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 0.5 cup (120ml) whole milk
- 0.5 cup (65g) all-purpose flour
- 0.5 cup (100g) brown sugar, packed
- 4 tbsp (55g) cold unsalted butter, cubed
- 0.5 tsp (1g) ground cinnamon
Instructions:
- Place 1 cup of butter in a saucepan over medium heat. Melt and cook, whisking occasionally, until milk solids toast and the butter becomes mahogany-colored and smells nutty. Remove from heat immediately and cool slightly.
- In a medium bowl, whisk together 2 cups of all-purpose flour, baking powder, salt, and 1 tsp of ground cinnamon.
- In a separate large bowl, beat eggs and granulated sugar until pale and fluffy.
- Slowly stream in the cooled brown butter and vanilla extract, mixing until the batter is smooth.
- Alternately add the dry flour mixture and the whole milk to the batter, stirring until just combined.
- Gently fold in the diced apples until evenly distributed.
- Prepare the streusel by combining 0.5 cup flour, brown sugar, 0.5 tsp cinnamon, and cold cubed butter, mixing until crumbly.
- Pour batter into a 9-inch springform pan, top with the cinnamon streusel, and bake for 45 minutes or until a toothpick comes out clean.
