Ingredients:
- 4 ounces (115g) unsalted butter, cut into cubes
- 1/4 cup (15g) fresh sage leaves, roughly chopped
- 1-2 cloves garlic, minced (optional)
- Pinch of red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1 tablespoon (15ml) lemon juice (optional)
Instructions:
- Place butter in the saucepan over medium heat.
- Allow the butter to melt completely. Continue cooking, swirling occasionally, until the butter foams, then subsides and starts to turn a nutty brown color and smells toasted. Watch carefully; it burns easily!
- Once the butter is browned, immediately add the chopped sage and minced garlic (if using).
- Sauté for about 30 seconds, until the sage is fragrant and slightly crisp.
- Remove from heat and season with salt, pepper, and red pepper flakes (if using).
- Stir in lemon juice (if using) for a touch of acidity.
- Immediately toss with your choice of pasta, gnocchi, vegetables, or protein.
