Ingredients:

  • 4 ounces (115g) unsalted butter, cut into cubes
  • 1/4 cup (15g) fresh sage leaves, roughly chopped
  • 1-2 cloves garlic, minced (optional)
  • Pinch of red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon (15ml) lemon juice (optional)

Instructions:

  1. Place butter in the saucepan over medium heat.
  2. Allow the butter to melt completely. Continue cooking, swirling occasionally, until the butter foams, then subsides and starts to turn a nutty brown color and smells toasted. Watch carefully; it burns easily!
  3. Once the butter is browned, immediately add the chopped sage and minced garlic (if using).
  4. Sauté for about 30 seconds, until the sage is fragrant and slightly crisp.
  5. Remove from heat and season with salt, pepper, and red pepper flakes (if using).
  6. Stir in lemon juice (if using) for a touch of acidity.
  7. Immediately toss with your choice of pasta, gnocchi, vegetables, or protein.
