Ingredients:
- 2 cups (480ml) plain yogurt (full-fat or low-fat Greek yogurt works best)
- 1 medium cucumber, peeled, seeded, and finely diced (approx. 1 cup or 240 ml diced)
- 1/4 cup (5g) fresh mint leaves, finely chopped
- 1/4 cup (5g) fresh cilantro (coriander) leaves, finely chopped (optional)
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt, or to taste
- 1/8 teaspoon black pepper, or to taste
- Pinch of cayenne pepper or red pepper flakes (optional, for a bit of a kick!)
Instructions:
- Peel, seed, and finely dice the cucumber. Pat dry with paper towels to remove excess moisture (this prevents a watery raita).
- Finely chop the mint and cilantro (if using).
- In a mixing bowl, combine the yogurt, diced cucumber, chopped mint and cilantro, cumin, salt, pepper, and cayenne pepper (if using).
- Gently stir all ingredients together until well combined.
- For the best flavour, cover the raita and chill in the refrigerator for at least 30 minutes before serving. This allows the flavours to meld together.
- Serve chilled with your favorite Indian dishes. This is a perfect raita recipe to enhance your meal.
