Ingredients:

  • 2 cups (480ml) plain yogurt (full-fat or low-fat Greek yogurt works best)
  • 1 medium cucumber, peeled, seeded, and finely diced (approx. 1 cup or 240 ml diced)
  • 1/4 cup (5g) fresh mint leaves, finely chopped
  • 1/4 cup (5g) fresh cilantro (coriander) leaves, finely chopped (optional)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste
  • Pinch of cayenne pepper or red pepper flakes (optional, for a bit of a kick!)

Instructions:

  1. Peel, seed, and finely dice the cucumber. Pat dry with paper towels to remove excess moisture (this prevents a watery raita).
  2. Finely chop the mint and cilantro (if using).
  3. In a mixing bowl, combine the yogurt, diced cucumber, chopped mint and cilantro, cumin, salt, pepper, and cayenne pepper (if using).
  4. Gently stir all ingredients together until well combined.
  5. For the best flavour, cover the raita and chill in the refrigerator for at least 30 minutes before serving. This allows the flavours to meld together.
  6. Serve chilled with your favorite Indian dishes. This is a perfect raita recipe to enhance your meal.
