Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (120g) semolina flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1 cup (240ml) cold sparkling water
  • 1 pound (450g) fresh or frozen calamari, cleaned and cut into rings
  • Oil for frying (such as vegetable or canola oil)
  • Marinara sauce for serving
  • Lemon wedges for serving
  • Fresh parsley, chopped for garnish

Instructions:

  1. If using frozen calamari, thaw and drain well. Pat the calamari dry with paper towels to remove excess moisture.
  2. In a large bowl, whisk together all-purpose flour, semolina flour, baking powder, salt, pepper, and paprika. Gradually whisk in cold sparkling water until the batter is smooth and has a pourable consistency. Allow it to chill in the refrigerator for about 30 minutes.
  3. In a large pot or deep-fryer, heat oil to 350°F (175°C). Use a thermometer for accuracy.
  4. Dip each calamari ring into the cooled batter, allowing excess batter to drip off.
  5. Carefully lower the battered calamari into the hot oil in small batches. Avoid overcrowding. Fry for 2-3 minutes until golden brown and crispy, stirring occasionally.
  6. Use a slotted spoon to transfer the fried calamari to a paper towel-lined baking sheet. Sprinkle lightly with salt while still hot. Serve immediately with marinara sauce, lemon wedges, and a sprinkle of fresh parsley.
