- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 cup kefir (plain or flavored)
- ½ cup vegetable oil
- 3 large eggs

- 3 tbsp unsalted butter, softened
- 2-3 tbsp milk (adjust for desired consistency)

Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch sheet cake pan with cooking spray or butter, and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, combine the granulated sugar and eggs. Whisk them together until light and fluffy. Then, add the kefir, vegetable oil, and vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Pour the batter into the prepared sheet cake pan and spread it evenly with a spatula.
- Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven. Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- In a medium bowl, beat together the softened butter and powdered sugar. Add the milk and vanilla extract, mixing until smooth. Adjust the milk quantity for your desired icing thickness.
- Once the cake has fully cooled, spread the icing evenly over the top. If desired, sprinkle with colorful sprinkles for decoration.
- Cut the cake into squares or rectangles and serve.
