Ingredients:

  • 1 cup kefir (plain or flavored)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch sheet cake pan with cooking spray or butter, and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, combine the granulated sugar and eggs. Whisk them together until light and fluffy. Then, add the kefir, vegetable oil, and vanilla extract. Mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. Pour the batter into the prepared sheet cake pan and spread it evenly with a spatula.
  6. Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once baked, remove the cake from the oven. Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. In a medium bowl, beat together the softened butter and powdered sugar. Add the milk and vanilla extract, mixing until smooth. Adjust the milk quantity for your desired icing thickness.
  9. Once the cake has fully cooled, spread the icing evenly over the top. If desired, sprinkle with colorful sprinkles for decoration.
  10. Cut the cake into squares or rectangles and serve.
