Ingredients:

  • 4 pieces (5 oz / 140 g each) store-bought Naan flatbread
  • 1/2 cup (120 ml) pizza sauce
  • 1 tbsp (15 ml) olive oil
  • 2 cups (225 g) shredded low-moisture mozzarella cheese
  • 4 oz (115 g) pre-cooked grilled chicken breast
  • 1/4 cup (15 g) thinly sliced red onion
  • 1/4 cup (40 g) sliced baby bella mushrooms
  • 2 tbsp (8 g) chopped fresh basil
  • 1 tsp (2 g) dried oregano

Instructions:

  1. Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Place the naan pieces on the baking sheet and toast them in the oven for 2–3 minutes until the bread feels firm to the touch.
  3. Spread 2 tbsp (30 ml) of pizza sauce onto each toasted naan, leaving a 1/2 inch (1.2 cm) border around the edge.
  4. Evenly distribute the shredded mozzarella cheese across the sauce.
  5. Layer the grilled chicken breast, sliced red onion, and baby bella mushrooms on top of the cheese.
  6. Lightly brush the exposed naan edges with olive oil.
  7. Bake in the center rack of the oven for 7–10 minutes until the cheese is bubbling and golden-brown.
  8. Remove from oven and immediately sprinkle with fresh basil and dried oregano.
