Ingredients:

  • 3 large overripe bananas, mashed (approx. 340g)
  • 1/2 cup (120g) plain Greek yogurt
  • 1 large egg (50g)
  • 1/3 cup (80ml) pure maple syrup or honey
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) whole wheat flour or oat flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1/2 cup (60g) chopped walnuts or pecans
  • 1/4 cup (35g) dark chocolate chips (70% cacao or higher)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, mash the bananas until smooth with no large chunks remaining.
  3. Whisk in the Greek yogurt, egg, maple syrup, and vanilla until the mixture is completely homogeneous.
  4. Sift in the flour, baking soda, salt, and cinnamon.
  5. Gently fold the ingredients together using a spatula until no streaks of flour remain.
  6. Fold in the chopped walnuts and dark chocolate chips.
  7. Pour the batter into the prepared pan and smooth the top with your spatula.
  8. Bake for 50–60 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs.
