Ingredients:
- 3 large overripe bananas, mashed (approx. 340g)
- 1/2 cup (120g) plain Greek yogurt
- 1 large egg (50g)
- 1/3 cup (80ml) pure maple syrup or honey
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) whole wheat flour or oat flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/2 cup (60g) chopped walnuts or pecans
- 1/4 cup (35g) dark chocolate chips (70% cacao or higher)
Instructions:
- Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, mash the bananas until smooth with no large chunks remaining.
- Whisk in the Greek yogurt, egg, maple syrup, and vanilla until the mixture is completely homogeneous.
- Sift in the flour, baking soda, salt, and cinnamon.
- Gently fold the ingredients together using a spatula until no streaks of flour remain.
- Fold in the chopped walnuts and dark chocolate chips.
- Pour the batter into the prepared pan and smooth the top with your spatula.
- Bake for 50–60 minutes until a toothpick inserted into the center comes out clean or with a few moist crumbs.
