Ingredients:

  • 4 (6-8 ounce) walleye fillets
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon minced fresh herbs (parsley, thyme, dill, or a mix)
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving (optional)
  • Fresh parsley sprigs, for garnish (optional)

Instructions:

  1. Preheat grill to medium heat (about 375-400°F or 190-205°C). Clean the grill grates thoroughly with a grill brush. Lightly oil the grates to prevent sticking.
  2. In a small bowl, whisk together olive oil, lemon juice, minced herbs, minced garlic, salt, and pepper.
  3. Place walleye fillets in a shallow dish or resealable bag. Pour the marinade over the fish, ensuring it's evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  4. Remove the walleye from the marinade and discard the marinade. Place the fillets on the preheated grill, skin-side down if using skin-on fillets.
  5. Grill for 4-6 minutes per side, or until the fish is opaque and flakes easily with a fork. Avoid overcooking, as walleye can dry out easily.
  6. Remove the grilled walleye from the grill and serve immediately. Garnish with fresh parsley sprigs and lemon wedges, if desired.
