Ingredients:
- 4 (6-8 ounce) walleye fillets
- 2 tablespoons olive oil
- 2 tablespoons lemon juice, freshly squeezed
- 1 tablespoon minced fresh herbs (parsley, thyme, dill, or a mix)
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Lemon wedges, for serving (optional)
- Fresh parsley sprigs, for garnish (optional)
Instructions:
- Preheat grill to medium heat (about 375-400°F or 190-205°C). Clean the grill grates thoroughly with a grill brush. Lightly oil the grates to prevent sticking.
- In a small bowl, whisk together olive oil, lemon juice, minced herbs, minced garlic, salt, and pepper.
- Place walleye fillets in a shallow dish or resealable bag. Pour the marinade over the fish, ensuring it's evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
- Remove the walleye from the marinade and discard the marinade. Place the fillets on the preheated grill, skin-side down if using skin-on fillets.
- Grill for 4-6 minutes per side, or until the fish is opaque and flakes easily with a fork. Avoid overcooking, as walleye can dry out easily.
- Remove the grilled walleye from the grill and serve immediately. Garnish with fresh parsley sprigs and lemon wedges, if desired.
