Ingredients:

  • 2 Flounder Fillets (approx. 6 oz/170g each), skin on or off, pat dry
  • 2 tablespoons (30ml) Olive Oil, extra virgin
  • 2 tablespoons (30ml) Fresh Lemon Juice
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh Parsley, chopped
  • 1 tablespoon Fresh Dill, chopped
  • 1/2 teaspoon Dried Oregano
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper
  • 1 Lemon, sliced thinly (for garnish)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, parsley, dill, oregano, salt, and pepper.
  3. Place the flounder fillets in the baking dish. Pour the marinade over the fillets, ensuring they are evenly coated.
  4. Arrange lemon slices over the flounder fillets. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  5. Remove from oven and serve immediately.
