  • 4 Tbsp Unsalted Butter or mayonnaise, softened, for spreading
  • 4 oz Low-Moisture Mozzarella, shredded
  • 2 oz Feta Cheese, crumbled
  • 1 cup, packed Fresh Spinach, roughly chopped
  • 2 Tbsp Sun-Dried Tomatoes in Oil, drained and finely chopped
  • 2 Tbsp Kalamata Olives, pitted and sliced
  • 1 Tbsp Red Onion, very finely minced
  • 1 Tbsp Fresh Basil Leaves, chiffonade (thin ribbons)
  • 1/2 tsp Dried Oregano (Mediterranean)
  • Pinch Freshly Ground Black Pepper

Instructions:

  1. Combine Ingredients: In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, chopped sun-dried tomatoes, sliced olives, minced red onion, fresh basil, dried oregano, and black pepper.
  2. Mix Thoroughly: Toss gently until all ingredients are evenly distributed, ensuring every bite of the sandwich has all the key flavours.
  3. Prepare the Bread: Lay out the four slices of bread. Generously spread a thin layer of softened butter (or mayonnaise) all the way to the edges of one side of each slice.
  4. Build the Toastie: Place two slices of bread, butter-side down, on your chopping board. Divide the filling mixture evenly between these two slices, spreading it gently but firmly across the bread.
  5. Seal: Top each sandwich with the remaining slices of bread, ensuring the buttered sides are facing out.
  6. Pre-heat Pan: Heat a non-stick frying pan or cast iron skillet over medium-low heat. Low and slow cooking is crucial for melting the cheese without burning the crust.
  7. Grill the First Side: Place the assembled sandwiches carefully into the warm pan. Cook for 4 to 5 minutes, pressing down gently with your spatula or a small weight about halfway through cooking. The bottom crust should be a deep, uniform golden-brown.
  8. Grill the Second Side: Flip the sandwiches carefully. Cook for another 3 to 4 minutes, again pressing lightly.
  9. Check Doneness: The sandwich is ready when the crust is golden on both sides and the cheese filling is completely melted and beginning to ooze slightly.
  10. Serve: Remove from the pan, let rest for one minute, slice diagonally, and serve immediately.
