Ingredients:

  • 1 ½ pounds (680g) ground beef (80/20 blend preferred, or use ground turkey)
  • 1 cup (120g) breadcrumbs (panko or regular, unseasoned)
  • ½ cup (60g) finely chopped onion
  • ¼ cup (60ml) milk (any kind)
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup (120ml) ketchup
  • 1 tablespoon brown sugar (light or dark)
  • 1 teaspoon yellow mustard

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
  2. In a large bowl, gently combine the ground beef, breadcrumbs, onion, milk, egg, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Be careful not to overmix.
  3. In a small bowl, whisk together the ketchup, brown sugar, and yellow mustard until smooth.
  4. Evenly distribute the meatloaf mixture into the prepared muffin tin, filling each cup almost to the top.
  5. Spoon a generous amount of the glaze over each muffin, spreading it evenly.
  6. Bake for 20-25 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C). The glaze should be bubbly and slightly caramelized.
  7. Let the muffins rest in the muffin tin for a few minutes before carefully removing them with a spoon or knife. Serve warm.
