Ingredients:
- 1 ½ pounds (680g) ground beef (80/20 blend preferred, or use ground turkey)
- 1 cup (120g) breadcrumbs (panko or regular, unseasoned)
- ½ cup (60g) finely chopped onion
- ¼ cup (60ml) milk (any kind)
- 1 large egg, lightly beaten
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup (120ml) ketchup
- 1 tablespoon brown sugar (light or dark)
- 1 teaspoon yellow mustard
Instructions:
- Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
- In a large bowl, gently combine the ground beef, breadcrumbs, onion, milk, egg, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Be careful not to overmix.
- In a small bowl, whisk together the ketchup, brown sugar, and yellow mustard until smooth.
- Evenly distribute the meatloaf mixture into the prepared muffin tin, filling each cup almost to the top.
- Spoon a generous amount of the glaze over each muffin, spreading it evenly.
- Bake for 20-25 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C). The glaze should be bubbly and slightly caramelized.
- Let the muffins rest in the muffin tin for a few minutes before carefully removing them with a spoon or knife. Serve warm.
