Ingredients:

  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 2 tablespoons (30 ml) tahini
  • 1 clove garlic, minced
  • 2 tablespoons (30 ml) olive oil
  • Juice of 1 medium lemon (about 2 tablespoons or 30 ml)
  • Salt, to taste
  • 2 tablespoons (30 ml) water (add more as needed for consistency)
  • 1/2 cup (75 g) feta cheese, crumbled
  • 1/3 cup (50 g) olives, chopped (Kalamata or green)
  • Fresh parsley or dill, for garnish (optional)
  • Pita chips or sliced vegetables for serving

Instructions:

  1. Combine chickpeas, tahini, minced garlic, olive oil, lemon juice, and salt in a food processor.
  2. Blend until smooth, adding water to reach desired consistency.
  3. Taste and adjust seasoning, if necessary.
  4. Scoop hummus into a serving bowl or spread it onto individual serving plates.
  5. Top generously with crumbled feta cheese and chopped olives.
  6. Sprinkle fresh parsley or dill over the top for color and flavor.
  7. Serve immediately with pita chips or vegetable slices on the side.
