Ingredients:

  • 6 cups (900g) seedless watermelon, cubed into 1-inch pieces
  • 6 oz (170g) feta cheese, crumbled or cubed
  • 1/2 cup (15g) fresh basil leaves, chiffonade or torn
  • 2 tbsp (30ml) extra virgin olive oil
  • 1 tbsp (15ml) fresh lime juice
  • 1 tsp (5ml) honey
  • 1/4 tsp (1.5g) sea salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Cube the chilled watermelon into uniform 1-inch pieces and place them in a large bowl. Gently crumble the feta into small chunks.
  2. In a small jar or bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until the mixture is velvety and well-combined.
  3. Drizzle the vinaigrette over the watermelon cubes. Add the crumbled feta and fresh basil, then gently fold the ingredients together using a large spoon or rubber spatula until just coated.
