Ingredients:

  • 1 cup (130 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 1/2 cup (50 g) grated cheese (e.g., cheddar or parmesan)
  • 1 egg yolk
  • 2 tablespoons sesame seeds
  • 2 tablespoons poppy seeds
  • Sea salt, to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream the softened butter and grated cheese until smooth.
  4. Add the egg yolk to the butter and cheese mixture and mix well. Gradually add the dry ingredients and mix until a dough forms.
  5. Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  6. On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut into desired shapes using a knife or pizza cutter.
  7. Place cut biscuits on a parchment-lined baking sheet. Brush with a bit of water and sprinkle with sesame seeds, poppy seeds, and sea salt.
  8. Bake in preheated oven for 15-20 minutes or until golden brown.
  9. Let the biscuits cool on a wire rack before enjoying.
