Instructions:
- Preheat the Oven: Preheat to 375°F (190°C).
- Prepare Muffin Tin: Grease muffin tin or line with silicone liners.
- Sauté Spinach: Heat skillet over medium heat. Add chopped spinach and sauté until wilted (about 2-3 minutes), then set aside to cool.
- Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, beat eggs, then whisk in milk and olive oil until well blended.
- Combine and Fold: Pour wet ingredients into dry ingredients, folding gently to combine. Add sautéed spinach, feta, and green onions; fold until just combined.
- Fill Muffin Tin: Evenly distribute batter into the muffin tin (about ¾ full).
- Bake: Bake in preheated oven for 20-25 minutes, or until golden and a toothpick inserted comes out clean.
- Cool and Serve: Allow muffins to cool slightly in the pan before transferring to a wire rack. Serve warm or at room temperature.
