Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 large eggs
  • ½ cup milk (whole or plant-based)
  • ⅓ cup olive oil
  • 1 cup fresh spinach, chopped
  • ½ cup crumbled feta cheese
  • 2 green onions, chopped
  • Sesame seeds or flaxseeds (for garnish, optional)

Instructions:

  1. Preheat the Oven: Preheat to 375°F (190°C).
  2. Prepare Muffin Tin: Grease muffin tin or line with silicone liners.
  3. Sauté Spinach: Heat skillet over medium heat. Add chopped spinach and sauté until wilted (about 2-3 minutes), then set aside to cool.
  4. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Combine Wet Ingredients: In another bowl, beat eggs, then whisk in milk and olive oil until well blended.
  6. Combine and Fold: Pour wet ingredients into dry ingredients, folding gently to combine. Add sautéed spinach, feta, and green onions; fold until just combined.
  7. Fill Muffin Tin: Evenly distribute batter into the muffin tin (about ¾ full).
  8. Bake: Bake in preheated oven for 20-25 minutes, or until golden and a toothpick inserted comes out clean.
  9. Cool and Serve: Allow muffins to cool slightly in the pan before transferring to a wire rack. Serve warm or at room temperature.
