Ingredients:
- 2 (6 oz / 170g) Salmon fillets, skin-on
- 1 tbsp (15ml) Extra virgin olive oil
- 1 tbsp (15ml) Fresh lemon juice
- 2 cloves (6g) Garlic, minced
- ½ tsp (1g) Smoked paprika
- 1 cup (150g) Baby potatoes, halved or quartered
- 2 cups (180g) Broccoli florets
- 1 medium (150g) Red bell pepper, sliced
- 2 tbsp (30ml) Extra virgin olive oil
- ½ tsp (1g) Dried oregano
- 1 tsp (6g) Sea salt
- ½ tsp (1g) Black pepper
- 1 tbsp (15ml) Fresh parsley, chopped
- 1 lemon, cut into wedges
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a bowl, toss the halved baby potatoes with 1 tbsp olive oil, half of the salt, and half of the black pepper.
- Spread the potatoes on the sheet pan and roast for 10–12 minutes until they are slightly softened.
- While potatoes roast, whisk together the lemon juice, minced garlic, smoked paprika, and 1 tbsp olive oil.
- Brush this mixture generously over the salmon fillets. Note: Coat the sides too for more flavor
- Toss the broccoli florets and sliced red bell pepper with the remaining 2 tbsp olive oil, dried oregano, the rest of the salt, and black pepper.
- Move the partially roasted potatoes to one side of the pan.
- Place the brushed salmon fillets in the center and surround them with the seasoned broccoli and peppers.
- Return the pan to the oven and roast for another 10–12 minutes until the salmon is opaque and flakes easily and broccoli tips are charred.
- Remove from the oven and immediately squeeze fresh lemon wedges over the entire pan. Garnish with chopped parsley.
