Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts, cut into 1/2-inch pieces
- 1 tbsp (15ml) olive oil
- 1/2 tsp (2.5ml) garlic powder
- 1/2 tsp (2.5ml) onion powder
- 1/4 tsp (1.25ml) dried thyme
- 1/4 tsp (1.25ml) dried rosemary
- Salt and pepper to taste
- 1/4 cup (60ml) chicken broth
- 2 cups (250g) all-purpose flour, plus more for dusting
- 1 tbsp (12g) baking powder
- 1 tsp (5g) salt
- 1/2 tsp (2.5g) baking soda
- 1/2 cup (115g) cold unsalted butter, cut into cubes
- 3/4 cup (180ml) cold buttermilk
- 2 tbsp (30ml) melted butter, for brushing
Instructions:
- Sauté chicken in olive oil with spices until cooked through. Add chicken broth and simmer to create a flavorful sauce. Set aside.
- Whisk together dry ingredients (flour, baking powder, salt, baking soda).
- Cut cold butter into the dry ingredients using a pastry blender or food processor until the mixture resembles coarse crumbs.
- Gently stir in cold buttermilk until just combined. Do not overmix!
- Turn dough out onto a lightly floured surface. Gently pat into a 1-inch thick rectangle. Fold the dough in thirds like a letter. Repeat folding two more times. This creates layers!
- Pat dough to 3/4 inch thickness. Cut out biscuits using a 2-inch cutter.
- Slice each biscuit in half horizontally. Place a generous spoonful of chicken filling on the bottom half of each biscuit. Top with the other half.
- Place filled biscuits on a parchment-lined baking sheet. Brush the tops with melted butter.
- Bake in a preheated oven until golden brown and cooked through. This is a delicious chicken biscuit recipe!
