Ingredients:

  • 3 cups (600g) Granulated Sugar
  • 1 cup (240ml) Water
  • 1/4 teaspoon Cream of Tartar (optional)
  • Granulated Sugar (for coating)
  • Cotton String or Wooden Skewers
  • Food Coloring (optional)
  • Flavoring Extracts (optional)

Instructions:

  1. Dip strings/sticks in water, then roll in granulated sugar. Let dry completely.
  2. Sterilize the glasses/jars and set aside.
  3. Combine sugar, water, and cream of tartar (if using) in a saucepan.
  4. Heat over medium heat, stirring constantly until sugar dissolves.
  5. Stop stirring, insert candy thermometer, and bring to a boil. Cook until the mixture reaches 300°F (149°C).
  6. Remove from heat and let cool for 5-10 minutes.
  7. Stir in food coloring and flavoring extracts, if desired.
  8. Carefully pour the hot syrup into prepared glasses/jars, filling them about 3/4 full.
  9. Suspend sugar-coated strings/sticks into the syrup, ensuring they don't touch the bottom or sides of the glass. Use clothespins or clips to hold them in place.
  10. Let the jars sit undisturbed at room temperature for 3-7 days, or until the desired size of crystals has formed.
