Ingredients:
- 3 cups (600g) Granulated Sugar
- 1 cup (240ml) Water
- 1/4 teaspoon Cream of Tartar (optional)
- Granulated Sugar (for coating)
- Cotton String or Wooden Skewers
- Food Coloring (optional)
- Flavoring Extracts (optional)
Instructions:
- Dip strings/sticks in water, then roll in granulated sugar. Let dry completely.
- Sterilize the glasses/jars and set aside.
- Combine sugar, water, and cream of tartar (if using) in a saucepan.
- Heat over medium heat, stirring constantly until sugar dissolves.
- Stop stirring, insert candy thermometer, and bring to a boil. Cook until the mixture reaches 300°F (149°C).
- Remove from heat and let cool for 5-10 minutes.
- Stir in food coloring and flavoring extracts, if desired.
- Carefully pour the hot syrup into prepared glasses/jars, filling them about 3/4 full.
- Suspend sugar-coated strings/sticks into the syrup, ensuring they don't touch the bottom or sides of the glass. Use clothespins or clips to hold them in place.
- Let the jars sit undisturbed at room temperature for 3-7 days, or until the desired size of crystals has formed.
