Ingredients:

  • 1 tbsp Olive Oil (15 ml)
  • 1 lb Italian Sausage (sweet or hot), casings removed (450g) OR 1lb British bangers, casings removed (450g)
  • 1 medium Yellow Onion, chopped (approx. 1 cup) (150g)
  • 2 cloves Garlic, minced (approx. 2 tsp) (6g)
  • 1 large Red Bell Pepper, chopped (approx. 1 cup) (200g)
  • 1 large Green Bell Pepper, chopped (approx. 1 cup) (200g)
  • 1 (28 oz) can Crushed Tomatoes (794g)
  • 1 (15 oz) can Tomato Sauce (425g)
  • 1 tsp Dried Oregano (2g)
  • 1/2 tsp Dried Basil (1g)
  • 1/4 tsp Red Pepper Flakes (optional) (0.5g)
  • Salt and Black Pepper, to taste
  • 1 lb Pasta of your choice (Spaghetti, Penne, Rigatoni all work well) (450g)
  • Grated Parmesan Cheese, for serving

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add sausage (or bangers) and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
  3. Add bell peppers to the skillet and cook until slightly softened, about 5 minutes.
  4. Stir in crushed tomatoes, tomato sauce, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring to a simmer, then reduce heat to low, cover, and simmer for at least 15 minutes, or up to 30 minutes, stirring occasionally.
  5. While the sauce simmers, cook pasta according to package directions until al dente.
  6. Drain pasta and add it directly to the skillet with the sauce. Toss to coat. Serve immediately, topped with grated Parmesan cheese.
