- 1 large Green Bell Pepper, chopped (approx. 1 cup) (200g)
- 1 (28 oz) can Crushed Tomatoes (794g)
- 1 (15 oz) can Tomato Sauce (425g)
- 1 tsp Dried Oregano (2g)
- 1/2 tsp Dried Basil (1g)
- 1/4 tsp Red Pepper Flakes (optional) (0.5g)
- Salt and Black Pepper, to taste
- 1 lb Pasta of your choice (Spaghetti, Penne, Rigatoni all work well) (450g)
- Grated Parmesan Cheese, for serving
Instructions:
- Heat olive oil in a large skillet over medium heat. Add sausage (or bangers) and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
- Add bell peppers to the skillet and cook until slightly softened, about 5 minutes.
- Stir in crushed tomatoes, tomato sauce, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring to a simmer, then reduce heat to low, cover, and simmer for at least 15 minutes, or up to 30 minutes, stirring occasionally.
- While the sauce simmers, cook pasta according to package directions until al dente.
- Drain pasta and add it directly to the skillet with the sauce. Toss to coat. Serve immediately, topped with grated Parmesan cheese.
