Ingredients:
- 2 tbsp olive oil (30 ml)
- 4 oz smoked bacon, diced (115g)
- 1 medium onion, finely chopped (approx. 150g)
- 2 cups cooked potatoes, mashed (approx. 400g)
- 1 cup cooked cabbage, shredded (approx. 200g)
- ½ cup cooked carrots, diced (approx. 100g)
- ½ cup cooked Brussels sprouts, halved or quartered (approx. 100g)
- Salt and freshly ground black pepper to taste
- 2 tbsp butter (30g)
- Optional: Fresh parsley, chopped, for garnish
- Optional: Fried eggs, for serving
Instructions:
- Heat olive oil in a large frying pan over medium heat. Add the diced bacon and cook until crispy. Add the chopped onion and sauté until softened and translucent.
- In a large bowl, gently mash together the cooked potatoes, cabbage, carrots, and Brussels sprouts. Be careful not to over-mash; you want some texture.
- Add the cooked bacon and onion mixture to the mashed vegetables. Season generously with salt and freshly ground black pepper. Mix well to combine.
- Divide the vegetable mixture into two equal portions and shape them into patties, roughly 1-inch (2.5cm) thick.
- Melt the butter in the same frying pan over medium heat. Carefully place the patties into the pan and cook for 8-10 minutes per side, or until golden brown and crispy.
- Garnish with fresh parsley (if using) and serve hot, ideally with a fried egg on top.
