Ingredients:

  • 2 tbsp olive oil (30 ml)
  • 4 oz smoked bacon, diced (115g)
  • 1 medium onion, finely chopped (approx. 150g)
  • 2 cups cooked potatoes, mashed (approx. 400g)
  • 1 cup cooked cabbage, shredded (approx. 200g)
  • ½ cup cooked carrots, diced (approx. 100g)
  • ½ cup cooked Brussels sprouts, halved or quartered (approx. 100g)
  • Salt and freshly ground black pepper to taste
  • 2 tbsp butter (30g)
  • Optional: Fresh parsley, chopped, for garnish
  • Optional: Fried eggs, for serving

Instructions:

  1. Heat olive oil in a large frying pan over medium heat. Add the diced bacon and cook until crispy. Add the chopped onion and sauté until softened and translucent.
  2. In a large bowl, gently mash together the cooked potatoes, cabbage, carrots, and Brussels sprouts. Be careful not to over-mash; you want some texture.
  3. Add the cooked bacon and onion mixture to the mashed vegetables. Season generously with salt and freshly ground black pepper. Mix well to combine.
  4. Divide the vegetable mixture into two equal portions and shape them into patties, roughly 1-inch (2.5cm) thick.
  5. Melt the butter in the same frying pan over medium heat. Carefully place the patties into the pan and cook for 8-10 minutes per side, or until golden brown and crispy.
  6. Garnish with fresh parsley (if using) and serve hot, ideally with a fried egg on top.
