- 1/2 cup (113g) unsalted butter, cold and cut into cubes
- 1/4 cup (60ml) ice water, plus more if needed
- 1 cup (200g) packed light brown sugar
- 1/2 cup (100g) granulated sugar
- 1/4 cup (30g) all-purpose flour
- 1/4 teaspoon (1.5g) salt
- 1 cup (240ml) heavy cream
- 1/2 cup (120ml) whole milk
- 2 large eggs
- 1 tablespoon (15ml) unsalted butter, melted
- 1 teaspoon (5ml) vanilla extract
- Optional: 1-2 tablespoons maple syrup
Instructions:
- Make the Pie Crust: Combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough comes together. Flatten into a disc, wrap in plastic, and chill for at least 30 minutes.
- Prepare the Filling: In a large bowl, whisk together brown sugar, granulated sugar, flour, and salt.
- Combine Wet Ingredients: In a separate bowl, whisk together heavy cream, whole milk, eggs, melted butter, and vanilla extract. Add maple syrup (if using).
- Combine Wet and Dry: Gradually pour the wet ingredients into the dry ingredients, whisking until smooth.
- Roll Out the Dough: On a lightly floured surface, roll out the chilled dough into a 12-inch circle.
- Transfer to Pie Plate: Carefully transfer the dough to the pie plate and crimp the edges.
- Pour in the Filling: Pour the filling into the prepared pie crust.
- Bake: Bake in a preheated oven at 375°F (190°C) for 45-55 minutes, or until the filling is set with a slight jiggle in the center and the crust is golden brown.
- Cool and Serve: Let the pie cool completely on a wire rack before slicing and serving.
