Ingredients:

  • 2 large eggs
  • 1 tablespoon milk or cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon unsalted butter
  • 1/4 cup shredded cheese (optional)
  • 2 tablespoons chopped ham, cooked bacon, or sausage (optional)
  • 2 tablespoons chopped vegetables (optional)
  • 1 tablespoon fresh herbs (optional)

Instructions:

  1. In a bowl, whisk together the eggs, milk/cream, salt, and pepper until light and frothy. Ensure the yolks and whites are fully combined.
  2. Place the skillet over medium heat. Add the butter and let it melt completely, swirling to coat the pan evenly. The butter should be hot enough that a drop of egg mixture sizzles gently.
  3. Pour the egg mixture into the hot pan.
  4. Let the omelet cook undisturbed for about 30 seconds, until the edges begin to set.
  5. Using a spatula, gently push the cooked egg from the edges towards the center of the pan, tilting the pan to allow the uncooked egg to flow underneath. Repeat this process around the entire pan until most of the egg is set but the surface is still slightly moist.
  6. Sprinkle your desired fillings evenly over one half of the omelet.
  7. Carefully fold the unfilled half of the omelet over the filling, using the spatula to assist.
  8. Cook for another minute or two, until the filling is heated through and the cheese (if used) is melted. Adjust cooking time based on your desired level of doneness.
  9. Gently slide the omelet onto a plate and serve immediately.
