Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 pound turkey sausage, removed from casing (450g)
  • 1 medium yellow onion, diced (about 1 cup)
  • 1 red bell pepper, diced (about 1 cup)
  • 1.5 pounds Yukon Gold potatoes, diced into ½-inch cubes (about 680g)
  • 1 large apple (such as Honeycrisp or Gala), diced (about 1.5 cups)
  • 1 teaspoon dried thyme (5 ml)
  • ½ teaspoon smoked paprika (2.5 ml)
  • Salt and freshly ground black pepper to taste
  • 4 large eggs (optional)
  • Chopped fresh parsley (optional)
  • Hot sauce (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Add turkey sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove sausage from skillet and set aside.
  2. Add diced onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Add diced potatoes to the skillet and cook, stirring occasionally, until golden brown and tender, about 15-20 minutes.
  4. Add diced apple, thyme, and smoked paprika to the skillet. Cook until apple is slightly softened, about 3 minutes.
  5. Return the cooked sausage to the skillet. Stir to combine all ingredients. Season with salt and pepper to taste.
  6. If desired, create four wells in the hash and crack an egg into each well. Cook until eggs are set to your liking.
  7. Garnish with fresh parsley and serve immediately, with hot sauce on the side if desired.
