Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 pound turkey sausage, removed from casing (450g)
- 1 medium yellow onion, diced (about 1 cup)
- 1 red bell pepper, diced (about 1 cup)
- 1.5 pounds Yukon Gold potatoes, diced into ½-inch cubes (about 680g)
- 1 large apple (such as Honeycrisp or Gala), diced (about 1.5 cups)
- 1 teaspoon dried thyme (5 ml)
- ½ teaspoon smoked paprika (2.5 ml)
- Salt and freshly ground black pepper to taste
- 4 large eggs (optional)
- Chopped fresh parsley (optional)
- Hot sauce (optional)
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Add turkey sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove sausage from skillet and set aside.
- Add diced onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Add diced potatoes to the skillet and cook, stirring occasionally, until golden brown and tender, about 15-20 minutes.
- Add diced apple, thyme, and smoked paprika to the skillet. Cook until apple is slightly softened, about 3 minutes.
- Return the cooked sausage to the skillet. Stir to combine all ingredients. Season with salt and pepper to taste.
- If desired, create four wells in the hash and crack an egg into each well. Cook until eggs are set to your liking.
- Garnish with fresh parsley and serve immediately, with hot sauce on the side if desired.
