Ingredients:

  • 4 large whole-wheat tortillas (8-inch)
  • 2/3 cup hummus
  • 1 ripe avocado, sliced
  • 2 cups baby spinach
  • 1/2 cup carrots, shredded
  • 1/2 cup cucumber, julienned
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup red onion, thinly shaved
  • 1 tbsp fresh lime juice
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper

Instructions:

  1. Toss the baby spinach, shredded carrots, and sliced peppers in a small bowl with the lime juice, salt, and pepper. Lightly massage the greens to break down the fibers.
  2. Lay the tortilla flat on a clean surface and spread 2-3 tablespoons of hummus across the center, extending it about an inch from the edges to create a moisture barrier.
  3. Place a handful of the seasoned greens on top of the hummus. Layer the sliced avocado, cucumber, and red onion in a tight row down the center.
  4. Fold the sides of the tortilla inward, tuck the bottom edge over the fillings, and roll tightly toward the top.
  5. Wrap the completed roll in parchment paper for 2 minutes to set the shape.
