Ingredients:
- 2 cups (50g) packed fresh basil leaves
- 3 cloves (9g) garlic, peeled
- 1/3 cup (45g) pine nuts
- 3 tbsp (12g) nutritional yeast
- 1/3 cup (80ml) extra virgin olive oil
- 1 tbsp (15ml) fresh lemon juice
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) black pepper
Instructions:
- Place the pine nuts, garlic, and nutritional yeast into the food processor. Pulse 5–7 times until the mixture looks like coarse sand.
- Add the fresh basil leaves, lemon juice, salt, and pepper. Pulse in short 2-second bursts until the basil is finely chopped but not yet a puree.
- While the processor is running on low, slowly drizzle in the extra virgin olive oil in a steady stream. Continue processing only until the sauce reaches a creamy, unified consistency.
