Ingredients:
- 4 (6 oz) swai fish fillets (170 g each)
- 1/4 cup olive oil (60 ml)
- 2 tablespoons fresh lemon juice (30 ml)
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh dill, finely chopped
- Zest of 1 lemon
- 2 tablespoons olive oil (30 ml)
- 1 tablespoon lemon juice (15 ml)
- Salt and pepper, to taste
Instructions:
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, basil, salt, and pepper.
- Place swai fillets in a shallow dish and pour the marinade over them. Ensure they are evenly coated. Cover and refrigerate for 30 minutes.
- In a clean bowl, combine chopped parsley, dill, lemon zest, olive oil, lemon juice, salt, and pepper. Mix well and set aside.
- Heat the grill to medium-high (about 400°F/200°C).
- Remove the fish from the marinade and let excess drip off. Place fillets on the grill skin-side down. Grill for 4-5 minutes on each side, or until they flake easily and reach an internal temperature of 145°F (63°C).
- Plate the grilled swai, drizzle with the lemon-herb dressing, and enjoy!
